Sweet and Savory Breakfast Sandwich Recipe

thank my daughter's summer camp for the inspiration for this easy breakfast
sandwich idea. My daughter tried sausage patties at camp a couple years ago
for the first time. At the time, she was not particularly open to trying new
foods, but camp food doesn't cater to the picky eater. She came home raving
about sausage patties and had a great idea for breakfast...namely, sandwiching
the patty between two pancakes. We gave it a go and it was a hit!
When I found

while I was browsing the bacon aisle at my local HEB, I was inspired to try a
sweet and savory version of my daughter's original idea.
Let me show you how easy these mini crepes come together.
You want overly ripe bananas with lots of dark spots for this recipe because
they add the best flavor! Blend everything together in a mixer. The recipe
makes 3 cups of crepe batter.
This quick breakfast recipe featuring savory turkey sausage patties sandwiched between banana oat crepes is filling and delicious! It can be easily prepped the night before and eaten on the go for a no-fuss breakfast for the whole family.
Mini Crepe Breakfast Sandwich
The crepes for this recipe are adapted from ones that I've been making a lot lately. It's a sugarless crepe sweetened with bananas and uses oats instead of flour. My kids love them.
This easy breakfast sandwich is so easy to whip up! It's cinch to make a
homemade breakfast on busy school mornings, especially if you make the crepes
in advance. The Jimmy Dean Heat 'n Serve sausage patties are even faster. Just
a quick reheat in the microwave or a few minutes on the stove if you like to
get a little browning.
In my version, there is no swirling of the pan to create a thin crepe, these
cook up more like pancakes. But adding the turkey sausage patty in between is
truly a delicious match made in heaven!
Ingredients for Sweet Banana Oat Crepes
- 1 tsp ground flax
- 1 cup oat flour (equivalent to 1-1/2 cups ground oats)
- 1 cup almond milk
- 1/2 cup water
- 2 ripe bananas
- 2 large eggs
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- avocado or coconut oil
- blender
- fry pan
- griddle
Recipe yields approximately 40 silver dollar size crepes
Blend Crepe Batter
Cook Crepes on Griddle
Heat a griddle to medium and brush a little avocado oil or coconut oil
evenly on the surface. These mini crepes will take a little longer to cook
than pancakes do because they're very moist. Cook the first side until the
surface is covered in bubbles and they no longer look wet. Then flip and
cook for another minute or so.
Set aside the cooked crepes while you heat the turkey sausage patties.
Alternately, you can prep the recipe up to this point the night before
and store the crepes in the fridge until breakfast. Then simply reheat
for a few seconds in the microwave. Or you could refrigerate the crepe
batter for up to a week and make just what you need for that morning
(if you choose to do this, you may need to thin the batter a little
with water as it tends to thicken as it stands.

Then it's a matter of assembling this sweet and savory breakfast sandwich.
A drizzle of syrup makes everything taste better, but if you need to eat
them on the go, the syrup is not necessary.

The slightly sweet crepes with the savory, meaty sausage is a delicious
way to start the day! We love to have breakfast for dinner a couple times
a month. In that case, I would fry up some hash browns or scrambled eggs
to serve alongside the breakfast sandwiches for a filling and satisfying
dinner.
