Yummy Chocolate Chip Meringue Kisses

When Mr DIY and I got married (waaaaay back in 1992), my sweet M-I-L presented
us with a recipe book, filled with handwritten family favorites. It even
mentions who in the family loves each recipe!
Armed with this
valuable resource, I set out to fool my husband into thinking I was the
world's greatest cook by making all his favorites! 😂
These
Chocolate Chip Meringues are one of his top favorite homemade treats of all
time. The recipe even adds some sage advice..."Hide from Chris or all will be gone in one evening!"

some of our favorite dessert recipes for Valentines Day! I can't wait to see

Dessert for dinner?
So here's where I tell you that, aside from sweets, it took me years to become
a good cook! I remember coming home from work, taking a package of ground beef
out of the fridge, and wondering how on earth I was supposed to turn it into
something delectable for dinner!
I eventually figured it out, and
Mr DIY and I laugh now at some of my early attempts at cooking! I have several
family favorite recipes here on the blog,

We both love chocolate, and these Chocolate Chip Meringue Kisses
certainly deliver. What I love about them is that they're bite-sized, so you
can eat one or two and feel satisfied without the guilt! Keep reading for a printable recipe card.

Ingredients
- 2 egg whites at room temperature
- dash of salt
- 1/8 teaspoon cream of tartar
- 1/2 teaspoon vanilla (I omitted because I wanted bright white meringues)
- 3/4 cup sugar, divided
- 1-1/2 cups mini chocolate chips
How to make Chocolate Chip Meringue Kisses
- Preheat oven to 250°F
- In the bowl of a stand mixer, beat egg whites with cream of tartar, salt and vanilla (if using) until soft peaks form
- Add 1/2 cup sugar in a thin, steady stream, with mixer running constantly until stiff peaks form (stop and scrape down the bowl once or twice)
- In a separate bowl, stir chocolate chips with remaining sugar
- Gently fold chocolate chips and sugar into meringue
- Cut 1" off end of a piping bag and fill with meringue mixture
- Cover baking sheet with waxed paper and pipe meringue kisses*
- Bake for 30 minutes
- Turn oven off and let meringues cool inside oven with door closed overnight (or for several hours if you bake them during the day)
- Store in an airtight container.
* if you don't have piping bags, you can simply drop meringues by teaspoon
onto a parchment-lined baking sheet, but for Valentines Day, it's worth a
little extra effort to make kisses!
You and your loved ones will
have a hard time resisting these crunchy, melt in your mouth chocolate
treats!
These sweet treats aren't limited to just Valentine's Day! My M-I-L bakes them for Christmas, especially when we visit! 😉
To make this dessert more decadent, you could make chocolate pudding and serve these Chocolate Chip Meringue Kisses alongside the pudding with a little whip cream on top!
Taking the time to bake a dessert or sweet treat for your family is a great way to say "I LOVE YOU" this Valentine's Day!

ReplyDeleteIn place of the vanilla you could use Pure Almond Extract or use the clear vanilla by Wilton.
Haha, your husband knows what he's talking about, LOL! Tell him I approve!! Thank you for your tip about the clear extracts, I don't think I've ever bought clear vanilla!

DeleteThese sound amazing; yum! I was thinking of making pink meringue bowls and then putting ice cream and strawberries in. My mom made them for a party one time and I fell in love with meringue. Pinned and will be trying!
