The best thing about Thanksgiving, aside from being with family and friends,
is definitely the food...can I get an
amen?
That huge turkey feast that always tastes like home, followed by my favorite -
the pie! Do you serve pie for dessert on Thanksgiving or are you less
traditional? I always love to hear how other people change things up to suit
their families! One friend says they don't even eat the pie on Thanksgiving
because everyone's too stuffed...instead, they serve it for breakfast the next
day!
I always manage to save enough room for pie because pie is my all time
favorite comfort dessert! From my
mom's perfect apple pie, to
fresh strawberry pie
and
grandma's chocolate fudge pie, and then using the scraps to make
pie crust cinnamon pinwheel cookies, I love them all!
I think my favorite part of pie is a flaky, crumbly homemade crust combined
with a gooey center!! Oh man, now I'm craving pie in a big way!
Today is
Thrifty Style Team, and we're sharing our favorite Thanksgiving Day
foods and tablescapes with you! I know you're going to love this post and get
so many ideas from my friends at the end!
I shared my
Thanksgiving table decor and the
easiest maple leaf place cards
last week, in case you missed it. But first things first, let's get back to
pie 😏😋😋😋
You might remember my homemade
strawberry mini pies
that I shared during the summer. They were amazing, but very fussy to make
because of the runny filling.
I found the trick to making these hand pies the easiest way possible and I know you're going to love them too!
Easy mini hand pies with your favorite filling
While I simplified the fillings for these mini pies, I still recommend making
the cream cheese crust. It's really fail-proof, bakes up so flaky, and is
so much better than the packaged crusts you buy at the store! Do
yourself and your family a favor and make this easy, 3-ingredient crust!
Mini Hand Pie Ingredients
- 1/2 cup butter, at room temperature
- 4 oz cream cheese, softened
- 1 cup all purpose flour
- additional flour for rolling out dough
- favorite jams, lemon curd, Nutella, small Reese's cups, etc for filling
Preheat oven to 350°
Add
parchment paper
to cookie sheet
Make the crust
Mix the softened butter and cream cheese until it is fluffy, then add the
flour and mix until it comes together. I used my
stand mixer, and it came together beautifully in just minutes. Because it's so
moist, this pie dough does need to be refrigerated for 30 min to firm up.
Just wrap in plastic wrap and pop into the fridge (or even the freezer for
10-15 minutes).
Prepare the crust for the filling
Once the crust is chilled, divide it in half and roll out half at a time on a
floured surface. I love to use my
large Silpat mat
for this. The beauty of this crust is you can keep adding flour as needed and
it won't dry out!
Cut the pie crust into rounds with a
biscuit cutter. I actually went back and used a 3-1/4" cutter.
You could make these pies bite size by using a smaller cutter, but you'll
obviously have to adjust the amount of filling.
Be sure to reroll the scraps of pie crust to make as many of these mini hand
pies as you can!
Add filling to mini pies
Now for my favorite part, the fillings! Use your favorite jam, lemon curd,
Nutella, even a mix of peanut butter, marshmallows and chocolate chips would
be fantastic! Add about 1 tsp to the pie crust cutouts. I love using these
thicker fillings because you're not introducing any moisture to the pie, which
makes it so easy to get these mini pies made fast and in your mouth!
Mmmm, is there really anything better than Nutella?! If you really wanted to
impress your guests, you could toast some hazelnuts and then chop them up and
include them in the filling with the Nutella! That would be amazing!
At the last minute, my son asked me to make some mini pies with the small
Reese's peanut butter cups. We were experimenting, but you can't really go
wrong with your fillings here, just use your favorites!
Seal pies and bake
Fold the pie crust around the filling and crimp the edges with a fork to seal.
Place your mini pies on a parchment lined baking sheet with a little room in
between each pie.
Do you notice the markings on the tops of mine? You need a little slit for
steam to escape, but I decided to use a fork and mark the pies so we'd know
which ones were which!!
Mr DIY doesn't like raspberry (and the rest of us love it), so I made sure
to mark them very differently.
Bake mini pies for 30-35 minutes, but watch them those last few minutes so
they don't get too dark! Set them on a
cooling rack for a few minutes.

Can you see how flaky that crust looks? And there's a little bit of Nutella
oozing out of a few pies. Man, I wish you could smell my house right now!
These mini hand pies smell amazing while they're baking!
You can definitely expect to get some company in the kitchen when you take
these hand pies out of the oven lol!
We absolutely loved both the raspberry and Nutella fillings and plan to make
them again, many times. The Reese's peanut butter cup filled pies were good
while they were warm, but after that the filling hardened up. They still got
eaten though, within minutes!
A mini hand pie is the perfect sweet bite after a big Thanksgiving Day meal! I
hope you try these and let me know how you liked them! They truly are easy and
fuss free and I'll bet the kids would enjoy adding their favorite fillings!
