Favorite Pumpkin Chocolate Chip Muffins

The perfect fall muffin, even for those who don't love pumpkin! These light and fluffy muffins, filled with dark chocolate chips, are the first thing I bake as soon as the weather starts to cool off! Keep reading for the recipe and a printable recipe card!
I'll be honest, I'm the only one in our family who really loves all things
pumpkin, so I was surprised when my picky daughter tried these at a friend's
house and came home raving about them! Of course I promptly requested the
recipe and we've been making them ever since!
The addition of dark chocolate chips elevates these simple muffins and adds a
depth of flavor that is richer (and chocolatey-ier!) than plain spiced

This recipe really couldn't be simpler, is easy to whip up and you'll
appreciate that you'll need just a single bowl. Perfect for breakfast,
snacks, treats in the lunch box - you'll be making these all season long!
They bake up light and fluffy.
I have altered this recipe slightly to reduce the sugar.
Ingredients
- 1/2-3/4 c sugar, white or brown
- 2 eggs at room temperature
- 1 cup pumpkin puree*
- 1/2 c melted butter
- 1 Tbs pumpkin pie spice
- 1-2/3 c all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 c chocolate chips (we like the Hershey's Special Dark)
- cupcake liners (I love these decorated watercolor pumpkin ones!)
*you won't use a whole can of pumpkin, but I've got a pumpkin cookie
recipe that will use up the rest!
Insider Tip: For the best presentation, after baked muffins cool, insert them into a fresh cupcake liner for the best appearance!
Prepare muffin pan with cupcake liners and set aside.
Preheat oven to 350°
Step 1
Cream together the sugar and eggs, then add the pumpkin, butter and pumpkin
pie spice and mix well. You can do this in a mixer, but I just used a whisk.
Step 2
Add the flour, baking soda, baking powder and salt and mix just until flour is incorporated.Step 3
Gently stir the chocolate chips into the muffin batter.
Step 4
Fill muffin cups with batter. I like to use an
ice cream scoop
to get even amounts. Bake on middle rack of oven for 20-25 minutes or until
toothpick inserted comes out clean.
Be prepared because your house will smell amazing!
Let muffins cool on a rack before diving in.
Your family will love these moist muffins with their dark chocolate chips. Of
course, you can use any chocolate chips you like!
