Fall treats are one of the best things about the season! Even if you're not a
fan of pumpkin, there's a lot to love about these cookies. They're healthy-ish
(I'll explain), loaded with good for you ingredients like pumpkin and oats and
dark chocolate, plus they're moist and satisfying!
These cookies bake up light and fluffy, with very little spreading on the
cookie sheet.

Pumpkin Oatmeal Cookies with Chocolate Chips

I recently shared
our family's favorite pumpkin muffin recipe. It is loved by even the non-fans of pumpkin! I feel the same about these
cookies, they're soo good. I first tried them last year when we drove to
Toronto, Canada for our niece's wedding. We all camped out at my brother and
sis-in-law's house. She had baked several treats for us to enjoy, and these
cookies were so good I had to get the recipe. I've adapted the original from
All Recipes
to make it a little healthier ie: less sugar and more spice! I also halved
the recipe, because the original makes way too many for our little household
of two!

Ingredients
- 1 cup packed brown sugar
- 1/4 cup granulated sugar
- 3/4 cup unsalted butter, at room temp
- 1/2 can pumpkin puree
- 1 egg
- 1/2 tsp vanilla extract
- 2 cups all purpose flour*
- 1 cup quick cook oats*
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt

1 cup dark chocolate chips (we like
this brand)
*I did find the dough to be very wet, so I added an additional 2
tablespoons of oats. When I make this recipe again, I will probably add
an additional 1/2 cup of oats, ground fine and I'll strain the liquid
from the pumpkin puree. Why? I prefer a drier cookie. My suggestion is
to try them first as is, then make adjustments to suit your taste.

How to make these cookies healthier
I almost always reduce the sugar when I bake sweet treats, and it's not
missed! You could also add some ground flax or chia seeds to the wet
ingredients to bump up the fiber. Dark chocolate chips are recommended
because they have some heart healthy benefits, as opposed to milk or
semi-sweet chocolate chips, but use what your family likes!
Directions
Preheat oven to 375° (but adjust as needed, my oven runs hot so I lowered it
to 365°)
Step 1
Beat sugars and softened butter together until smooth and creamy. Add
pumpkin, egg and vanilla and mix well.
Step 2
In a separate bowl, whisk all the dry ingredients together (flour, oats,
cinnamon, pp spice, baking powder, soda, salt). Stir all at once into wet
ingredients and stir just until moistened.
Step 3
Fold in chocolate chips by hand.
Step 4
Drop 1-2 tablespoons of dough onto cookie sheet, 2" apart.
Step 5
Bake 10-12 minutes or until edges are lightly browned. At the halfway point, I
always rotate my pans.
Let cookies cool on a wire rack, but be sure to try a couple while
they're warm! They are wonderful with a cup of tea or coffee!
If you love nuts, you could add walnuts to this recipe for a little crunch.
They would be a wonderful addition!
These pumpkin oatmeal cookies make a yummy snack (or even breakfast - ask me how I know!). I had to freeze the remainder so I didn't finish them all myself because
you know that one cookie is never enough!
